Construction and Materials

The Scanpan line is made of five-ply materials. Three layers of aluminum are sandwiched between stainless steel exterior layers. The bottom is magnetic stainless steel so that the cookware is induction compatible.

The nonstick lining uses no toxic PFOAs. Instead, a gentler PTFE combined with a ceramic-titanium provides the bulk of the nonstick coating. Stratanium is more durable than traditional nonstick coatings, and the company claims it will last longer.

Design

The design is a modern update of classic pots and pans. The polished stainless exterior is a beautiful finish that’s durable and goes well from the kitchen to the table. The sides are curved, giving you better coverage for stirring and scraping food from the bottom and sides.

The tops use a blend of stainless steel and glass. The stainless provides a better seal for moisture, while the glass gives you a glimpse of what your food is doing on the inside. It’s a unique and modern take on the lid.

Performance

The cookware is a well-performing set with excellent heat conduction and few hot spots. It doesn’t scorch food because stainless holds heat at lower temperatures better than aluminum, but it heats and cools a little faster with the aluminum core.

Its nonstick lining offers better functionality than all stainless, but claims that it will last a lifetime aren’t exactly accurate. If you take care of your pots and pans (hand wash and use soft cooking utensils instead of metal), you may get five good years of life.

Plus, the handles are thicker than some other manufacturers’ handles (All-Clad, looking at you), so they’re comfortable to carry. They don’t conduct heat as quickly, so they’ll stay cooler throughout the entire process.

The price may not suit beginners or those who are stocking an entire kitchen, but the price is comparable to higher-end cookware sets. With the slight extra durability and lifespan of Scanpan’s nonstick coating, you may get more life out of your higher-end set.
